Collagens form the scaffold that is responsible for maintaining the structural integrity of skeletal muscle; they play a vital role in muscle growth and development and contribute to muscle diversity, functionality, as well as the quality characteristics of meat. From a quantity/volume standpoint, collagens are by far the largest component of what is generally referred to as the extracellular matrix (ECM).
