ABSTRACT
The surimi industry is continuously changing due to the variability of different sh stocks around the world. This variation can arise as a consequence of environmental conditions and/or overshing, but can also be due to changes in the global economic situation. The demand for alternative sh products can also affect the supply of raw materials for surimi.
