ABSTRACT

Cow’s milk allergy is a serious health problem since milk is widely used for its nutritional values and useful properties in the manufacture of infant formula and a great number of processed foods. Infant formula is considered essential as an alternative to breast milk not only in the developed countries but also in the underdeveloped countries where there is rampant malnutrition, and therefore allergy to milk formula would cause serious growth retardation. As well, milk allergy in infancy would trigger hypersensitivity to other environmental and food allergies in atopic subjects. Due to the abundance of processed foods containing milk proteins in the market, there is a likelihood of unintentional intake of milk allergens. Therefore, it is quite important to develop hypoallergenic infant formulas and processed food products that contain milk components.
