ABSTRACT
Wild rice (Zizania) is a native North American genus. The species, Z palustris L., is found predominantly in the Great Lakes region of the United States and Canada. It grows in natural stands in the shallows of lakes and rivers and produces a grain that has been harvested for food for some 10,000 years [1–3].
