Lipids play a major role in human nutrition and health while accounting for roughly
40% of the total calories in most of the industrialized countries. They reduce the
bulk of the diet as they provide a concentrated source of energy. Added to this, lipids
are indispensable from the human diet as they form the major sources of essential
fatty acids and contain fat-soluble substances like vitamins and carotenoids. Plants
and animals, including those from the aquatic environ, account for most of the
dietary lipids.
