ABSTRACT

Hydrophobic effect is one of the main factors of the self-organization of biomolecules. For example, hydrophobic interactions are the major determining factors for the folding of proteins and the construction of biomembranes. Such functional architectures in living systems are constructed from many amphiphilic molecules that contain both hydrophilic and hydrophobic groups. The amphiphilic molecules selfassemble in water. This section deals with the fundamentals of hydrophobic effect and the self-assemblies of amphiphilic substances.
