Glutathione S-transferases (GSTs, EC 2.5.1.18) are a large family of Phase II biotransformation enzymes that catalyze the formation of glutathione (GSH)-electrophile thioether conjugates (GS-E), the rate-limiting step for the elimination of electrophilic compounds through metabolism to mercapturic acids.
