Foods are derived from plants, carcasses of animals, and single-cell organisms. Their main components include water, saccharides, proteins, lipids, and minerals (Table 1.1), as well as a host of other compounds present in minor quantities, albeit of significant impact on the quality of many products. The nonprotein nitrogenous compounds, vitamins, colorants, flavor compounds, and functional additives belong here.
