Once the sanitation process has been completed, everything in the plant is ready for production to begin and there is no further action to be taken, correct? As expressed in a recent car commercial, “Not exactly!” Equipment may appear to be clean and free of gross soils and contamination; however, there may be organic buildup and microorganisms not visible on the surface or hidden in niches. Assurance that sanitation is effective requires a monitoring system that encompasses steps involving verification and validation. The processes of verifying and validating sanitation are very different. In verifying, you are making an immediate determination that sanitation was effective for that prior process. However, with validation you are determining that the process is effective over a period of time.
