ABSTRACT

Plant foods contain a wide range of substances and many of these are biologically active (for example, vitamins, phytoestrogens, glucosinolates, and polyphenolic substances). These phytochemicals are therefore consumed with dietary fiber components, and it is highly probable that they contribute to the protective effects of high-fiber diets. This section is, however, concerned with the components of plant foods that are intimately associated with dietary fiber (Table 2.4.1).
