ABSTRACT
Figure 6.1 provides a broad view of the oxygen tolerance of various products found in shelf-stable and refrigerated packages. Low-acid particulate products that are aseptically packed present a U.S. Food and Drug Administration (FDA) challenge in the United States but can be found in the European Union and other countries outside the United States. For that reason they are included in this chart.
