ABSTRACT

The Japanese Ministry of Health, Labor, and Welfare recognized the magnitude of the problem of lifestyle-related diseases in 1996 (Figure 10.1). Lifestyle factors, such as alcohol, cigarette, stress, exercise, and food and the related diseases, such as cancer, heart disease, stroke, hypertension, diabetes, kidney disease, and so on, are all associated with free radicals [1,2]. In Japan, people are advised to protect themselves against such diseases, because adequate national funds are not allocated for health insurance. Food, health, and lifestyle are of growing concern in 21st-century Japan.
