ABSTRACT

PHYTATE (myo-inositol hexakisphosphate, InsP6) is a food component that isconsidered an antinutrient by virtue of its ability to chelate divalent minerals and prevent their absorption, but it has also been shown to have anticancer activity [1] and antioxidant activity [2]. It forms an iron chelate that suppresses lipid peroxidation by blocking iron-driven hydroxyl radical generation. This chapter will focus on the antioxidant properties that InsP6 exhibits in vivo.
