In food production and processing, new innovative technologies such as processoriented multivariate data analysis, process monitoring, and quality control are needed for appropriate process management, to maintain nutritional product quality and diminish the product loss owing to the decaying along the supply chain of perishable agro-food products. Product quality in fresh produce is determined by the plant genome, environmental conditions, and the production system (Zude and McRoberts 2006).
