ABSTRACT
Biochemical reactions occur in aqueous solution. Many biochemicals are sensitive to the degree of acidity or basicity of the water. In this chapter, we examine what is meant by terms such as acid and base, how the degree of acidity is measured, and how buffers maintain a desirable degree of acidity and basicity.
