ABSTRACT

In food processing facilities, many unit operations such as refrigeration, freezing, thermal sterilization, drying, and evaporation involve the transfer of heat between food products and heating or cooling medium. Heating and cooling of foods is achieved with heat exchangers. Heat exchangers also play a key role in waste heat recovery. There is a wide variety of heat exchangers available for food applications. The area or size of heat exchangers affects their effectiveness and initial and operating costs.
