ABSTRACT

In a bakery facility, thermal energy is used for bake ovens and boilers while electricity is used for machinery, electric bake ovens, refrigeration systems, and lighting. Energy conservation in steam generation and distribution is discussed in Chapter 4. Energy conservation technologies for air compressors and motors are discussed in Chapters 5 and 6, respectively. Heat exchangers are widely used in the dairy sector, and the energy conservation technologies for heat exchangers are discussed in Chapter 7. Boilers, heat exchangers, motors, and air compressors may generate waste heat, and waste-heat recovery technologies are discussed in Chapter 8. Since both processing heat and electricity are required by the bakery processing sector, a combined heat and power system can be used to effi ciently and economically provide electricity or mechanical power and useful heat from the same primary energy source. Combined heat and power systems are discussed in Chapter 9.
