The food industry faces serious challenges in the twenty- rst century. Consumers are demanding more from the foods they eat. Now foods must not only taste good and aid immediate nutrition, but also assist in mitigating disease, provide clear health bene ts, and help to reduce health care costs. To meet these demands, food manufacturers must prepare safe, healthy, and convenient foods that are of good value and of great taste. The global functional foods market is a dynamic and growing segment of the food industry, being expected to represent 5% of the total global food market in 2010 (Market Research, 2004).
