ABSTRACT

This chapter is aimed at developing a strategic methodology to identify a nonconventional process route to produce, at low cost, goat milk powder. This route, being technically and economically feasible, will be implemented in some agrocooperatives located in the Northeast of Brazil. Since goat milk powder is a new product-process investment for these small enterprises, a strategic plan should be created to develop the most adequate route for them. Therefore, Figure 18.1 shows schematically the main steps of the proposed plan to meet such a challenge of a new product-process route.
