ABSTRACT

Since the food crises that took place in Europe in the 1990s (“mad cow disease,” dioxins, etc.), consumers are questioning the safety of food products. In this context, the European Union (EU) published the White Book of Food Safety in January 2000 with the proposal of a food safety approach that turned out to be radically new in relation to the existing approaches up to that moment. The principle that governs the White Book is the transparency at every level of the FOOD SAFETY policy, what, undoubtedly, will help to increase the confidence of the consumers.
