In this chapter, the term “meat” has been used as denoting the skeletal, heart, and tonguemuscles,aswellastheliverandthekidneyofslaughteredmammalsand birds.ThetissuesofŒshandedibleinvertebrateshavebeenexcluded,sincethey have been treated in Chapter 15.
