ABSTRACT

There are several key developments in the history of lipid analysis, which have shapedthecurrentknowledgeoflipidsinfoodsystems.TheŒrstoftheseisthe developmentofefŒcient,quantitativesolvent-extractionsystemsfortherecoveryof purelipidextractsfromavarietyoffoodandnaturalsources.Whiletakensomewhatforgrantedtoday,signiŒcantresearchwasdevotedtothisareaduringthe 1940s-1960s. Without the establishment of this fundamental area, much of what we knowtodaywouldnothavefollowed.Followingfromthesediscoveriescamethe techniquesrequiredforthechemicalseparationoflipidtypesbasedonthesolubilityofdifferentlipidtypesinvarioussolventsystems.Thesetechniquescontinueto underpin the analysis of lipids today.
