ABSTRACT

Frying is defi ned as a process of simultaneous cooking and drying by immersing the raw material into hot oil. It is a well-described technology in applications to a variety of foods such as potatoes, nuts, bakery products, meat, fi sh and the like (Fellows, 2002). A capsule knowledge of frying of foods, comprising the particularities of heat and mass transfer, the properties of fried products and frying media, the process conditions and control, as well as descriptions of industrial frying systems, is given by Oreopoulou et al. (2007). Also, basic information on fry-drying of wood, used to a limited extent for high-temperature processing of wood, can be found in the papers by Rapp and Sailer (2001) and Grenier et al. (2007). Therefore, this chapter addresses only the dewatering of sludge-type materials as a novel application of the frying process.
