ABSTRACT

In recent years, endocrine-disrupting chemicals (EDCs) have received a great attention due to their potential effects on human health. One major exposure pathway is through ingestion of foods in our daily life as these foods may contain natural and synthetic EDCs. Therefore, it is important to monitor these EDCs in various foods. In this chapter, the analytical methods for the determination of EDCs in foods are discussed, which include extraction, cleanup, analysis, and detection techniques involved in the whole analysis. There is a long list of chemicals which have been identied as potential EDCs, but this chapter will focus on four main groups of compounds: alkylphenols, bisphenol-A (BPA), steroids, and phytoestrogens (Figure 27.1).
