ABSTRACT

Emulsions are a field of high complexity, which results not only from the different uses and ingredients of such systems but also from the interconnectedness of the factors governing their properties and their stability. This complexity forbids giving the very easy "general rules" or "recipes" to the formulator. Consequently, this chapter is an attempt how to approach, in practice, the emulsion development work in order to get the best quality product, whatever its end use. It also describes the various technical tools which can help the formulator in developing new emulsion products.
