ABSTRACT

Beverages or drinks are liquids produced for human consumption. They may or may not include alcohol. In this chapter, low or nonalcoholic beverages are studied. They are categorized into carbonated or noncarbonated depending on whether they contain carbon dioxide (CO2). Some beverages contain sugar and others are sugar-free containing sweeteners. Fruits such as oranges and other more or less exotic fruits are used to produce juices or fruits beverages. Some of them may be produced to meet speci˜c needs such as sports drinks, energy drinks, and light products. Milk and low or nonalcohol beers and wines are presented in this chapter as along with their quality control.
