ABSTRACT
The aim of this chapter is to show the enormous potential of high-pressuretechnology, and its applications to different areas, focusing mainly on biotechnology and industrial applications.
The advantageous use of high-pressure (HP) in food technology has been discussed in the previous chapter. These innovative advances in the food industry are beginning to be extrapolated to the cosmetic industry, and to the medical and pharmaceutical sciences [1, 2].
