ABSTRACT

In the foregoing chapters, the authors have extensively discussed the role of enzymes in various applications in different segments of the food and beverage processing industries and have also indicated future prospects for enzyme applications in their respective industries. In this chapter, the discussion is restricted to the overall emerging trends in research and development in food enzymes and their applications in food and beverage with the objective of emphasizing the importance in undertaking active research and development activities on food enzymes by food scientists, food technologists, and food biotechnologists in the coming years.
