ABSTRACT
Over the last 20 years there has been an impressive progress in inventing novel analytical techniques and methods towards improving both food and feed authenticity and traceability effectiveness.
In this chapter an attempt is made to summarise the most important advances in food analysis and their related potential applications with regard to authenticity and traceability.
