Toxic Principle and Mechanism of Action The highest concentrations of the water soluble, heat stabile, toxic amino acids Hypoglycin A and B are found in the seeds of the unripe fruits.1 The ripe aril of the fruit has very low if any of the toxins, and is commonly consumed in Jamaica.2 The hypoglycin A, once metabolized, inhibits many metabolic enzymes in cell mitochondria, that results in severe hypoglycemia.3
