Milk Powder

In this chapter attention is paid to spray-dried milk powder (Le., powder made from milk with a normal fat content), to skim milk powder, and, to a lesser extent, to whey powder. We restrict ourselves to spray-dried products, except for a small section. Basic principles of evaporation and drying are described in Chapter 9.
