ABSTRACT

The pineapple tree belongs to the Bromeliaceae family. Its fruit can be processed into several products such as canned pineapple slices, pineapple pulp, dried pineapple, pasteurized pineapple juice, and concentrate. Fresh pineapple juice is a popular product due to its pleasant aroma, avor, and numerous functional properties [1]. Pineapple juice satises the “5 A Day” dietary requirement of fruits and vegetables set by many health agencies [2]. Pineapple juice contains a variety of minerals, especially manganese, as well as amino acids, various sugars, vitamins, and polyphenols [3]. It  is considered as a functional drink due to its health-promoting properties and has anti-inammatory, antiatherosclerotic, antiaging, and many other healing properties, which are briey described in this chapter.
