ABSTRACT

The raspberry belongs to the Rubus genus, which includes a variety of edible berries. This chapter will focus on juice from the red raspberry (Rubus idaeus L.) and black raspberry (R. occidentalis L.), which are cultivated and consumed in many parts of the world. Boysenberry, loganberry, and tayberry which are hybridizations of blackberry and red raspberry cultivars, belong to the Rubus genus and are reviewed elsewhere [1].
