Using the face of a clock, the center and the four quadrants are configured. Breaking the mirror into four quadrants tends to make the mirror less intimidating and easier to visually imagine the flow lines and where height and color will be needed to keep the mirror in balance. Using butcher’s twine to align, the diagram in Figure 19.1 will help better explain this concept. A right-handed cook would have the mirror on the right side of their cutting board and for a left handed cook the mirror would be on the left side of the cutting board and the numbers would be transposed to 10-11 and 4-5.
