ABSTRACT

Food additives, as an important part of the modern food industry, play a great role in improving food color, avor, taste and texture, processing behaviors, oxidative stability, suppressing spoilage, and extending the shelf life of food. Without food additives, there would be no food manufacturing and modern food industry. Food additive technology not only provides reliable technical support and safety protection for the food processing and food catering industries, but also promotes their rapid development. As the continuous emergence of new food additives, the food industry can meet the various needs of consumers, which plays an important role in local economy and the people’s livelihood. This chapter reviews the function of food additives, the safety evaluation of food additives by different countries and international organizations, risk assessment of food additives, and risk management and control for food additives.
