ABSTRACT

In many food processing operations, electricity is a form of energy that plays an important role, since electric power is used for different purposes, such as in the generation of processing vapor, in obtaining hot water and hot air, among others. Electricity can also be applied to produce heat directly into the food, such as in the case of ohmic processing. In processes where it is necessary to pump a liquid or to create air circulation, it is necessary to use pumps and fans or compressors that use electric power. Thus, in all operations that consume electric power, it is important to determine its consumption, which provides an idea of the energy requirement for a given process.
