ABSTRACT

Changing demographics with rising purchasing power of consumers all over the world is shifting preferences in global food production. Modern technological innovations are allowing consumers to be aware of food production process, packaging and distribution information. Thus helping consumers make informed decision about their food choices. Better access to diet information linking food quality, safety, and nutrition is contributing to a demand for structural change in large-scale food production, processing, and retailing worldwide. Family food budget and expenditure are linked to income, and it greatly varies between developing and developed countries. In developing countries, higher household income is linked to increased demand for meat products, often leading to increased import of livestock. In developing countries changing lifestyle associated with increased purchasing power of the consumer is slowly shifting demand for processed food however price hinders widespread adoption.
