ABSTRACT

Food history is an interdisciplinary fi eld that examines the history of food and its cultural, economic, environmental, and sociological impact. History of food is considered distinct from the more traditional fi eld of culinary history, which focuses on the origin and re-creation of specifi c recipes. Food historians look at food as one of the most important elements of cultures, refl ecting the social and economic structure of society. The history of food safety binds all civilizations. Living things seek food for energy required for survival and breeding. But human beings differ from other living things, and expect physical, mental and social functions as well (Table 1).
