ABSTRACT

According to the Food and Agricultural Organiza tion of the United Nations (FAO) Fisheries Commodity statistics, world production of "spiced and marinated fish" was about 90 thousand metric tons in 1994. Germany produced about 85 percent of these products, and other producers were the Czech Republic and the Russian Federation. In addition, more than 60,000 metric tons of "herring preparations" were produced in 1994 (Annual Yearbook of Fisheries Statistics). In 1996 almost 160,000 pounds of prepared or preserved herring were produced, according to FAO statistics. Poland was the leading producer, followed by Denmark, Sweden, Germany, and t he Netherlands. World production of spiced and marinated fish steadily decreased during the ten-year period from 1985 to 1994, while production of herring preparations increased slightly from 1990 to 1994.
