Introduction

In Section 2 we will retrace the history of alcoholic beverage making and consumption. Section 3 gives the classification and representative examples of alcoholic beverages, and Section 4 describes the qu technology and traditional manufacturing processes for yellow wine and white liquor. Secton 5 briefly surveys the place of wine and liquor in Chinese culture, including their role in medicine, in food making, and in artistic creation.
