ABSTRACT

Fruit wines are fermented from fruit juice, usually with the addition of sugar. The fruit used includes apples, pears, peaches, plums, crabapples, cher­ ries, oranges, tangerines, ly ch ees, pineapples, mulberries, even tomatoes, and lesser known ones such as kiwifruit (the Chinese gooseberry that became popular worldwide after transplantation in New Zealand).
