ABSTRACT

In preparation of kamaboko, seasonings and other materials are added to the washed minced fish meat. An example of ingredients used is as follows: 3.75% salt, 0.7-1.5% sugar, 1.7-5.5% starch, 1.1-5.5% rice wine, 1.0% sodium glu­ tamate, and 0.2-0.3% sodium tripolyphosphate. The seasoned fish meat is formed into different shapes on a thin wooden plate and then steamed. Some­ times broiling is employed instead of steaming and is then called yakikamaboko.
