ABSTRACT

FU S A R I U M is a cosmopolitan genus of filamentous fungi that includes plant pathogens, saprophytes, and opportunistic human and animal pathogens. Some of the plant pathogenic species of Fusarium are problematic to food and feed safety because of the mycotoxins they produce in infected crop plants. These Fusarium toxins are low-molecular weight metabolites but vary markedly in structure and the apparent mechanisms by which they induce toxicoses. Some of the more commonly reported toxins are beauvericin, fumonisins, fusaric acid, fusarins, moniliformin, trichothecenes, and zearelanone.
