ABSTRACT
INTRODUCTION AMERICANS spend more than 41 billion dollars per year on fish and shellfish products, which amounts to about 15 pounds per person per year. This is about 8% of the total world catch. The U.S. fleet harvests 6% of the world’s catch and is behind China, Peru, Chile, and Japan (U.S. Seafood Industry, 1997).
