Lipases (1-5) and phospholipases ( 6,7) are water-soluble enzymes that can catalyze the hydrolysis of the ester bonds oftriglycerides and phospholipids, respectively. They play an important role in lipid metabolism and have been found in most organisms from the microbial (8-10), plant (11,12), and animal kingdoms (13,14).
