ABSTRACT
IN addition to the polysaccharide gums described in the previous chapters, there are many other agriculture resources that contain significant amounts of water-soluble polysaccharides and have a great potential as stabilizers and thickening and/or gelling agents. However, there are only limited amounts of in formation available in the literature regarding these materials. This chapter re views four polysaccharide gums that, in the author’s opinion, have great poten tial of becoming commercial gums.
