ABSTRACT

Combined methods technology is a simple and inexpensive alternative to refrigeration, freezing, and other processing methods intensive in energy expenditure and capital investment. Sensory evaluation of the treated apple slices substituted in apple pies corresponded to high acceptability and prefer­ ence. The development of such a fresh-like, wholesome, and high-quality fruit product can provide additional uses for the fruit. Therefore, food produced by combined methods technology is geared to the increasing demand for products that allow greater creativity in the household kitchen, such as incorpo­ ration into pies, salads, and pizza. This technology is an important alternative to traditional canning and drying, which stabilize products but dramatically change the organoleptic properties of apple.
