ABSTRACT

There are two important quality attributes for pomegranates, as in any other fruits, which are: external and internal quality attributes. External attributes include color, fruit size and shape whereas internal attributes include textural properties, total soluble solids, titratable acidity and flavor (brix/acid ratio), anthocyanin, vitamin C, sensory attributes, nutritional quality, functional quality and microbial quality. These attributes vary depending on cultivar, geographical conditions, climate and degree of maturity (Fawole et al. 2012a). Therefore, the most important aim of postharvest management is to determine suitable postharvest handling and storage practice to deliver the produce to the consumer in desirable condition. For this reason, first step in postharvest handling is the determination of the suitable handling and storage condition for the maintenance of the quality attributes.
