ABSTRACT

It is shown that the oxidation of apple pectin under the action of hydrogen peroxide and ozone-oxygen mixture in water solutions goes by a radical mechanism and is accompanied by a destruction of polysaccharide macromolecules. We study the kinetics of oxidative transformations (functionalization and destruction) of apple pectin under a wide range of process conditions.
