ABSTRACT
In a recent review published by a group of experts from the International Life Sciences Institute, ILSI Europe, Process-Related Compounds and Natural Toxins Task Force (van Boekel et al. 2010), the benecial aspects of food processing were identied and widely discussed-mainly to ensure safety and food quality while guaranteeing consumer acceptability.
